UT is the original first note of the solfège scale, taken from the Latin hymn "Ut queant laxis" by Guido d'Arezzo in the 11th century. The syllables (ut, re, mi, fa, sol, la) named the six notes of the hexachord. In the 17th century, Italian musician Giovanni Battista Doni replaced UT with DO because it was easier to sing on an open vowel. France still uses UT in formal music theory today.
